One of the hauls this week. Seen above: Radishes, celery, green beans, lettuce and peppers.
As you can see, the celery I planted in the garden did really well. It doesn’t look like the pale, thick stuff you find in the super market but it’ll do for drying. I decided to harvest some of the stalks around the edges. Stalks and leaves, which I washed off and dried in the dehydrator for things like soup. I’m thinking of making some celery salt. Do you know of any good uses for dried celery? I came across this article offering good info on growing/keeping celery.
Another round of radishes are producing nicely.
We also harvested one (of about two dozen) butternut squash to eat the other night. Can’t wait to harvest more and make soups or just slather them with butter and cinnamon and maple syrup.

You have done so well in your garden! I am really pleased that not only will we have our veg garden at home but we finally have space on the village allotment. So next year big plans to cover not only the nice stuff but staples too. So exciting, and I justlove the inspiration of others!

Of all the squashes/pumpkins, I think it’s my favorite. It has the most flavor.

what about celery salt? also, the french fridays group i cook with online includes a lot of recipes where you toss in a handful of celery leaves in with any stew or soup you are making to infuse more flavor :) your celery looks much better than the stuff in the store!

I had read that the darker the celery the more nutrients it has, but also the tougher and woodier it is.

Trying not to be too envious!!! I’m in an apartment so I don’t have garden space, although I do have a container garden. I’ve scouted out an area around the perimeter where I might be able to stash some more containers and I’m going to try some winter veges.
